Spicy Razor Clams with Fried Garlic and Cilantro

Ingredients
- 3 Tbsp. grapeseed oil or preferred cooking oil
- 1 medium white onion, diced ¼-inch
- 3 cloves of garlic, chopped
- 24 Razor Clams, cleaned and scrubbed
- 1 cup of dry white wine
- 1- 1½ cups of Dumpling Daughter Spicy Sweet Soy Sauce
- 2 Tbsp. unsalted butter
- Salt and pepper, to taste
Optional (but highly recommended):
- 2 Tbsp. of sliced and fried garlic
- 2 Tbsp. chili crisp
- ¼ cup of chopped peanuts
- ½ cup washed cilantro leaves
- Micro herbs, for garnish
Instructions
- Place the oil in a large skillet over medium heat. Add the onions and cook until translucent, about 5 minutes. Add the garlic and cook an additional 2-3 minutes, then add the clams. Raise the heat to high and stir.
- Add the white wine, cover, and cook until the clams are tender. (About 5-7 minutes.)
- Pour the soy sauce on top of the clams. Add the butter and stir to coat. Season the sauce as needed.
- Put the clams and the sauce on a large serving platter and top with the optional garnishes.
